Preheat oven to 400?F
Split ground beef into 2 mixing bowls. 1 ½ lbs in each
Dice green pepper + onion into very small pieces. Add half of the veggies + 1 egg to each bowl
Add half the seasonings to each bowl + Half the Worcestershire Sauce + Half bread crumbs to each bowl.
Mix each bowl well
For easy cleanup, line baking dish with aluminum foil. Put one meatloaf in the dish and flatten it across the bottom of the pan. In the center of the meat layer the spinach and mushrooms (you can add cheese here too if you want). Add the remaining meatloaf. Form a pocket by smashing the edge of the meat around the bottom meatloaf to the edge of the top meatloaf. The aluminum helps makes this easier. Cover with another sheet of aluminum + back 45 minutes.
Remove from the oven + uncover. Bake 35 minutes uncovered.
Add cheese to the top of the meatloaf, bake 10 minutes or until cheese melts. When finished, move to serving tray to remove it from the juice. It is good served hot or cold.
