Preheat the oven to 375 degrees Fahrenheit.
Lightly spray both sides of the pitas with cooking spray. Place with the smooth side up on a baking sheet. Sprinkle the pitas with the Parmesan, garlic powder, and paprika.
Bake for 8 to 10 minutes, or until golden brown. Remove from the baking sheet and let cool completely on a cooling rack, about 10 minutes.
Meanwhile, in a food processor or blender, process the tomatoes, 1/2 cup broth, garlic, oregano, salt, and pepper for 15 to 20 seconds, or until slightly chunky or the desired texture. Poor into a medium saucepan.
Stir in the remaining 1 cup broth. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat and simmer, covered, for 5 minutes, or until the flavors have blended.
Meanwhile, break the toasted pita rounds into 3/4-inch pieces. Sprinkle on top of bowls of the soup.
