Suggest a better descriptionPreheat oven to 350. In saucepan on low heat slowly melt 2 sticks butter. While butter is melting smash 4-8 cloves of garlic (we use 8 because we love garlic) and then add them to the melting butter. Warm for 10 minutes but don’t brown.
While garlic and butter are warming trim chicken and cut in half width wise and place on a clean tray. Spray roasting pan or sheet pan lightly with Pam or the like.
Remove the garlic butter from the heat and remove the garlic cloves. Reserve for another use. Take two shallow dishes place half the breadcrumbs and half garlic butter. In the breadcrumbs mix in half the Parmesan cheese(Kraft doesn’t work as nicely as the “fancy” Parmesan from the deli at Walmart) Take chicken and dip into garlic butter fully coating it, shake off excess. Then dip the butter coated chicken in bread crumbs making sure to cover every inch. Press into the chicken then shake off the excess. Place coated chicken into pan and continue with the rest adding more breadcrumbs, Parmesan and garlic butter to the bowls as needed. Once all chicken is in the pan drizzle the remaining butter over them. You can sprinkle the remaining breadcrumbs on top if you wish at this point.
Bake uncovered for 30 minutes or until the chicken is done and the top is nicely browned. Remove from oven and allow to rest for several minutes before serving.
Served with garlic mashed potatoes and green beans (we also serve with garlic bread) my kids who are extremely picky eaters due to sensory issues devour this!
