Paleo substitute for garlic mashed potatoes
Put 2 quarts of water in pan or pot with salt to boil
Cut core and leaves from head of cauliflower
Cut into florets and rinse clean
Place cauliflower in boiling water
Cook on med-high heat for 15 min
Drain well and transfer to large bowl
Add all other ingredients
Mix with immersion blender until blended but still has small chunks to give it texture
Salt and pepper to taste, mixing in with a whisk
