Suggest a better description1. Peel potatoes and cut into 2" pieces. If using Yukon gold, just wash and quarter (no need to peel).
2. Add potatoes, broth, and garlic to the pressure cooker pot.
3. Close the lid and release valve.
4. Cook on manual for 10 minutes.
5. After cook time, carefully turn valve to release pressure.
6. Remove lid and add salt, pepper, and desired plant-based milk.
7. Use potato masher. Add non-dairy butter or additional plant milk (as needed) until desired texture and taste is reached.
- Store leftovers in an airtight container. (up to 3 days in fridge / do not freeze)
- To double/reduce: edit ingredient amounts, leave cook time the same.
- Cashew or hemp milk also work well. Coconut milk works but affects the taste.
