Heat the oil in a fry pan over high heat. Add the mushrooms and cook, stirring occasionally, for 2-3 mins until golden. Remove from the pan.
Put pan back on medium heat, add the garlic and chilli - cook, stirring for 1 minute until garlic is golden. Return the mushrooms to pan and cook for another 1-2 mins stirring well to coat the mushrooms.
Remove from heat and season with salt and pepper - sprinkle with parsley and serve immediately with crusty bread.
