A nice side dish for any meal. Also great for the BBQ.
Preheat oven to 450F
Dice potatoes into bite size chunks, and parboil them (soft on the outside but not fully cooked). Drain the potatoes using a collendar. Swish the potato chunks in the collendar so the outside becomes rough. Place the potatoes in a cookie sheet or aluminum pan.
Sprinkle the dry ingredients over top of the potatoes. Add the olive oil and stir the entire mixture so the potatoes are evenly coated. There should be some excess olive oil in the bottom of the pan.
Cook at 450F for 25 minutes.
stir potatoes, then broil on low for 25 minutes or until crisp.
