Mouthwatering white fish infused with lemon and garlic and baked on a bed of vegetables
Take the fish fillets and lay in a large oven proof dish. Sprinkle well with rock salt and leave to one side
Blitz garlic and lemon juice and 1 tbsp oil together
Blitz breadcrumbs and cilantro
Chop other vegetables and lightly sauté before adding to dish around fish.
Pour lemon garlic oil over fish. Sprinkle breadcrumb mixture on top
Bake on high until fish is cooked and browned. (approx 30 mins)
I use a small handheld food chopper to quickly blitz the ingredients but you can chop or crush the garlic and cilantro and use readymade breacrumbs if you don't have one. Do not leave the fish marinating too long in the lemon juice mixture
