A light dish with well balanced flavors. Very easy and very quick.
1. Cut lemon in half. Cut 1 half into 4 wedges. Grate other half and reserve 1 tsp. zest.
2. In a large pot of salted, boiling water, cook pasta until al dente. Drain well.
3. Meanwhile, in a large skillet, heat butter, oil and garlic over medium heat until garlic sizzles. Add shrimp, salt, and red pepper.
Saute for 3 to 4 minutes or until shrimp are done. Add parsley and grated lemon zest. Toss pasta with shrimp mixture and serve, garnished with lemon wedges.
