Great Italian meatballs as a main dish or part of a spaghetti dinner
1. In a small bowl combine the bread crumbs and the milk to re-hydrate.
2. In a large bowl, combine the bread crumbs, pork, veal , beef, Parmesan, parsley, salt, onion, pepper and egg. Mix until combined. You can use a stand mixer for this or use your hands to make sure that all of the ingredients are thoroughly combined.
3. Using your hands, gently form the meat mixture into 16 golf all sized meatballs (about 2 oz each). Be careful not to pack the mixture too tightly so that your meatballs will not turn out too tough. Refrigerate for 1 hour.
4. In a large non-stick skillet, heat half of the olive oil over medium high heat. Add half of the meatballs and cook turning occasionally until well browned on all sides, about 6 minutes. Transfer the meatballs to a plate. Drain the Olin for the skillet, wipe with a paper towel and repeat the process for the remaining meatballs.
5. Drain the skillet again and rerun all of the meatballs to the skillet with 2-3 cups of marinara sauce. Bring to a boil and reduce heat, cover and simmer for about 15 minutes. Make sure to stir and rotate the meatballs occasionally. The cheese in the meatballs will begin to melt when the meatballs are ready. Remove from heat and serve immediately as a stand alone dish or over your favorite pasta.
