Place bacon on cooking sheet & bake @ 375degrees for 15-17min, depending on thickness of bacon.
Combine garlic, onion, chili peppers, lime juice & salt.
Let stand for 10 min.
Add cilantro (or parsley if you prefer). TIP: add mint to cilantro to tone-down the flavor a lil bit.
Add eggs, olive oil & hot sauce to gauc. Stir.
Prepare sandwiches by placing 2-3 slices of bacon, romaine lettuce & tomatoe.
Add pinch of salt.
Top with gauc mix & baguette bun
