scegliere dei fichi d'india molto maturi. sbucciarli tagliarli a pezzi e metterli a cuocere. quando saranno ben spappolati passarli al setaccio per eliminare gli ossicini. rimettere questo succo di nuovo sul fuoco aggiungendo per ogni chilo di polpa 150 gr. di farina e 200 gr. di zucchero e la scorza di un limone grattugiata. mescolare continuamente e quando si sara' ottenuta una crema densa e omogenea versarla in uno stampo. guarnire con filetti di buccia di limone
