Add shrimp sautéed in garlic if desire. Serve with field greens dressed in balsamic dressing.
* Cook gemelli according to package directions. After removing gemelli, add peas to water and blanch for 30 seconds. Drain peas (reserve 1 cup pasta/pea water), run peas under cold water until cool.
* In drained pasta pan (or food processor) combine 1 1/2 cups of peas, the mint, oil, 1/4 cup almonds, lemon juice and lemon zest. Process with hand blender or in food processor until well combined. Stir in cheese, salt and pepper.
* Heat pesto in pasta pan over medium-low heat. Add pasta, remaining peas,1/4 cup almonds and any reserved pasta water that's necessary. Serve immediately.
If adding shrimp, sauté and add during last step.
