Family's favorite cookie recipe. The only problem with these cookies is to figure out how to stop eating them.
Source: Based on an old family recipe passed down by my mother.
- Preheat oven to 350° F.
- In a large bowl, cream shortening, Splenda and sugars.
- Beat in eggs and vanilla until light and fluffy.
- Add Salt, Baking soda and Cinnamon, beating until well combined.
- Add flour slowly, mixing until well combined.
- Stir in Oatmeal, nuts, dried fruit. Optional - chocolate chips.
- Use cookie scoop and drop on cookie pan.
- Bake at 350 F. 8 minutes for medium large scoop. 9 minutes for large scoop.
In a convection oven, bake same amount of time at 325.

4 dozen cookies (large scoop)
When we're in St. George, which is a much drier climate, I add 1 Tablespoon extra vanilla or water.
