Found to be impossible to get right by Mathias
NB 300g of egg is about 5 eggs.
This receipe appears to be impossible.
1. Attach the power whisk. Add the eggs (whole), egg whites, sugar and salt to the bowl. Set the temperature to 60?C and the speed to mix 2. Once the termperature is reached (which takes about 1 minute) continue to whisk for another 5 minutes.Turn the termperature off, increase the speed to mix 6, and continue to whisk until the mixture becomes light and fluffy.
2. Take the bowl off the machine and and fold int he flours using a spatula, or use the fold function, being careful not to knock out too much of the air trapped in the mixture. Then fold in the butter using the same method.
3. Place into a prepared 25cm cake tin and baake in a pre-heated oven set at 180?C for 25-30 minutes. before cutting allow to cool completly, preferably for 24 hours.
4. Cut the cake into 3 slices, spead the strawberry jam on the spnge disk and then top with some butter cream, place a new slice of cake on top and repeat the process. Dust with icing sugar.
