Place butter (and/or coconut oil) in baking dish(es) and place in oven to preheat to 325F while you mix the other ingredients.
Beat eggs. Add flour, milk, and salt. Blend. Do not overmix.
Once butter is melted, add the batter to the dish(es).
Bake smaller dishes for about 25 minutes until the pancake has puffed up and browned on top.
Bake the large round pan for 25 minutes and then increase heat to 375F for about 25 minutes until the pancake has puffed up and browned on top.
Top with:
- berries and whipped cream
- maple syrup
- apples in a cinnamon caramel sauce
