Just a little sweet...
1.) Cover potatoes with water, bring to a boil for 10 minutes (or until tender)
2.) Fry bacon in a deep skillet over medium/high heat until browned and crisp, turning as needed. Remove from the pan and set aside.
3.) Add onion to the bacon grease, and cook over medium heat until browned.
4.) Add the vinegar, water, sugar, salt and pepper to the pan.
5.) Bring to a boil, then add the potatoes and parsley.
6.) Crumble in the bacon. Heat and then transfer to a serving dish.
7.) Can serve warm or cold.
