1. Cover potatoes in cold water, cutting any large potatoes in half. Bring to a boil and stir in 1tsp of salt.
2. Reduce to a simmer & cook for 15-20 minutes.
3. Drain water from pot & leave potatoes to steam dry.
4. Cut the bacon into small pieces with kitchen shears and cook until crispy.
5. Once the bacon is done, remove from heat and remove the bacon pieces.
6. Carefully add vinegar, sugar, dijon, salt & pepper to the bacon grease. Stir for a few minutes.
7. Stir in minced garlic & cook until golden.
8. Toss liquid in with the potatoes. Add the bacon and the parsley.
9. Serve immediately!
