Wonderful recipe with lots of vegetables. It is easy to prepare and leftovers warm up nicely.

Toss the beef strips evenly in cornstarch.
Fry the beef in batches so there is just a single layer in the medium size pan.
Use 2 tablespoon per batch and cook 5 minutes.
In a different saucepan heat 2 Tablespoons of oil on high heat.
Add garlic, slaw, ginger and cook for 4 minutes.
Add the soy sauce, rice vinegar and stir.
Bring to a boil.
Add Brown sugar and cornstarch mixture to the vegetables.
Mix thoroughly.
Mix 1 teaspoon of cornstarch with 3 Tablespoons of cold water in a separate bowl..
Add cook meat, cornstarch mixture, and cook for two minutes.
Add green onions and cook for another minute.
Serve over rice.
