Awesome, moist GFCF cupcakes/muffins/cake :) Recipe modified from Real Simple Magazine March 2011,
Preheat Oven to 350F.
Line muffin cups with paper.
Mix dry ingredients separately.
Blend margarine & sugar. Add pumpkin & Vanilla.
Add half of dry ingredients to pumpkin mixture.
Add milk.
Add remaining dry ingredients.
Bake 20mins or until done.
