Use in place of oils in cooking
Melt the butter in a saucepan over medium heat.
After it melts and starts simmering, reduce the heat to low.
Cook gently, uncovered, until it turns clear. (About 20 minutes)
If the curds that form at the bottom of the pan begin to brown, lower the heat.
Allow to cool slightly then strain it through cheesecloth into a glass jar.
Store at room temperature.
It will last a long time.
