Chop carrots, onion and celery.
Cover ham with cold water.
Add carrots, celery, onion, bay leaves and peppercorns to water.
Bring to boil and simmer for two thirds cooking time based on 30 mins per 500g.
Leave in liquid to cool enough to handle.
Peel skin off ham and score the fat.
Mix sugar and ginger and spread on ham.
Spoon a little cooking stock into a roasting tin.
Cook ham for remaining one third cooking time basting regularly.
