Sift together flout, cinnamon, soda, ginger, and cloves. Combine in medium sauce pan, sugar, honey, applesauce and shortening. Bring to a boil; simmer 5 minutes. Cool to lukewarm. Add unbeaten egg, almonds and dry ingredients. Mix well. Chill 6 hours or overnight.
Shape scant teaspoonsful of dough into balls for heads. Shape scant tablespoonsful into 3 inch strips for arms and 4 inch strips for legs. Place on greased cookie sheets. Shape as desired. Make eyes and nose from cut raisins and mouth from red cinnamon candies.
Bake at 325 degrees for 12 to 15 minutes. Do not brown. Store in covered container 3 to 4 days before serving.
