a yummy hot pudding - best served with custard
Preheat the oven to 180 degrees celsius.
PUDDING: In a mixing bowl, cream the butter and sugar. Add the eggs. Mix the honey and vinegar and add to the mixing bowl. Sift the dry ingredients together in a separate bowl, and add them to the butter mixture, alternating with the milk till just combined. Golf in the ground ginger and glace ginger. Pour the batter into a big serving dish or individual bowls, and bake int he overn for about 45 minutes for a big dish and about 20 minutes for smaller bowls.
SAUCE: Put all the ingredients in a saucepan. Stir until the sugar has dissolved and then bring to the boil. Turn down the heat and simmer till the sauce is slightly reduced. Pour sauce over the hot malva pudding.
CUSTARD: Heat the milk and vanilla. Whisk egg yolks and sugar until pale. Pour the milk into egg mixture, whisking well. Cook on a very low heat until it coats the back of a wooden spoon. Serve warm with the pudding.
CUSTARD: Its very important that the custard doesn't boil otherwise you'll end up with runny scrambled eggs!
