Quick, light tasting Thai dish. Can also be used with Chicken mince.

1. Prepare Noodles according to packet. Drain. Rinse under cold water. Drain well.
2. Combine sauce, honey and tablespoon of water in a small jug.
3. Heat an oiled, large wok over a high heat. Add pork, ginger and garlic. Stir-fry, breaking up the mince, for about 5 mins, or until pork changes colour. Add carrot and snow peas. Stir-fry for 2 minutes.
4. Add sauce mixture to wok with noodles. Stir-fry for 1 to 2 minutes more.
5. Serve, sprinkled with chilli flakes (optional !).
Can replace pork with chicken - works really well.
