Combine ginger solids and sugar with water and heat in pan. Simmer for 5 minutes
Strain to remove all solids
Mix all the other fluids into mix and allow to cool
Add Xanthum gum and then refrigerate for a few hours
Place in ice cream machine and allow to freeze
