In a mixing bowl, blend vegetable oil with sugar. Add beaten egg. Slowly add in molasses, salt, baking soda, and spices. Once ingredients are combined, slowly add flour to form dough. Refrigerate dough for at least an hour.
For cookies, roll out dough onto cold surface to 1/4 inch thickness. For best result, roll out onto wax paper. Stamp dough but do not remove individual cookies. Transfer entire sheet to freezer for 5-10 minutes. This will make the gingerbread boys easier to remove and transfer to baking stone or sheet.
Bake cookies in 375 degree oven for 6 minutes. Transfer immediately to cooling rack. Cookies should be cooled and set before removing from cooling rack.
**for gingersnaps, reduce flour by 1/2 cup. Roll dough into small balls and place on cookie sheet.
