Preheat oven to 350 degrees F
-Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl.
-Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy.
-Add molasses, egg and vanilla; beat well.
-Gradually beat in flour mixture on low speed until well mixed.
-Make dough into ball, put plastic wrap around it, and refrigerate a minimum of 4 hours (will be very sticky)
Four hours later...
-Roll out dough to desired thickness on lightly floured work surface (thicker usually tastes better :)
-Use cookie cutters to cut into gingerbread people shapes.
-Place on parchment covered baking sheets to avoid burned cookies bottoms.
Bake 8 to 10 minutes max. Do not over-bake! They will cook more on the pan after you take them out.
-Allow cookies to cool on baking sheets on wire racks for 1 to 2 minutes.
-Remove to wire racks and cool completely.
-Decorate cooled cookies as desired with your favorite frosting (i.e. Eggnog Cream Cheese Frosting)
