In saucepan, combine molasses, sugar,margarine, butter and ginger. Stir. Bring to boil & boil 1 minute. Cool to room temp, then beat in eggs.
In bowl, sift 3 cups flour, baking soda, salt, cinnamon,and nutmeg. Add molasses mixture. Stir in coffee. Add remaining flour - enough to make a stiff dough.
Cover dough. Chill overnight.
Cut with circular cookie cutters or slice from rolled log.
Bake on lightly greased cookie sheets at 375 for 10 mins.
