Combine coffee granules and boiling water, stirring until granules
dissolve. Cool completely.
Combine whole wheat flour and next 7 ingredients in a medium bowl; make a
well in the center of the mixture.
Combine cooled coffee mixture, milk, egg, and oil; add mixture to dry
ingredients, stirring just until dry ingredients are moistened.
Preheat nonstick griddle. For each pancake, pour ? cup batter onto hot
griddle; spread batter to a 5-inch circle. Cook pancakes until tops are
covered with bubbles and edges look cooked; turn pancakes, and cook other
side. Serve with apple butter, if desired.
