Preheat the oven to keep the pancakes warm.
Put the flour, sugar, baking powder, cinnamon, ginger and pinch of salt into a large bowl. Give them a quick mix and make a well in the centre. Grate the lemon zest in and add the vanilla extract. Gradually pour the milk in while stirring constantly. Beat in the egg.
Fry the pancakes.
