From How to Bake by Nick Malgieri.
1. Prepare 8 x 8 x 2-inch pan--butter, line bottom with parchment paper.
2. Set a rack in the middle of oven and preheat to 350 degrees.
3. in a mixing bowl, stir the dry ingredients, except sugar, together well.
4. In another bowl, beat the butter and sugar until light and fluffy. Beat in the egg and continue beating until smooth.
5. In a small bowl, stir molasses and milk together and add to the butter mixture with the dry ingredients. Fold the batter together with a rubber spatula.
6. Scrape the batter into the prepared pan. Bake for 35-45 minutes until well risen and firm in the center.
7. Cool in pan for 5 minutes, then unmold to a rack to cool completely.
Serve with whipped cream or applesauce.
