This Gingernsap recipe is timeless and delicious! A perfect treat for the holidays or any other time of the year!
Preheat oven to 350°F (175°C).
In large bowl, combine flour, ginger, baking soda, cinnamon, allspice & salt together. Stir mixture to blend evenly, then sift a second time into another bowl.
Put butter into mixing bowl & beat with hand mixer until creamy; gradually beat in white sugar. Next, beat in egg & dark molasses. Sift about 1/3 of flour mixture into butter mixture; stir until thoroughly blended. Sift in the remaining flour mixture & mix together until soft dough forms.
Pinch off small amounts of dough and roll into 1-inch thick diameter balls between your hands. (Note: You may want to cover your hands with some flour prior to rolling, as the dough can get quite sticky).
Roll each ball in cinnamon sugar, and place 2 inches apart on an ungreased baking sheet.
Bake in preheated oven until tops of cookies are rounded and slightly cracked; about 10-12 minutes. Let cookies cool for 15-20 minutes (store in air-tight container). Enjoy!
