I have used this recipe when serving large numbers...300 or so, and they kept and served well.
Cook carrots in water mixed with white and brown sugar until tender. Add butter and stir until melted. Mix cornstarch with 1 tablespoon of water until smooth. Add that and salt, garlic salt, and dill to carrot mixutre. Heat and stir until thickened.
