Cashews, peanuts, whole almonds, or pecan halves all taste great in this crunchy candy.
Line a baking sheet with foil. Butter the foil; set aside. In a heavy 10-inch skillet combine nuts, surgar, butter, and vanilla. Cook over medium-high heat, shaking skillet occasionally, till sugar begins to melt. Do not Stir. Reduce heat to low and cook til sugar is golden brown, stirring occasionlally. Remove skillet from heat. Pour onto prepared baking sheet. Cool completely. Break candy into clusters. Store tightly covered. Makes about 10 ounces.
Excellent for fruit/lettuce salads.
