In large bowl, beat eggs, oil, milk & vanilla with wire wisk until well blended. Add flour, brown sugar, baking soda, cinnamon & salt; stir just until dry ingredients are moistened. Stir in carrots, apple, coconut, raisins & 1/2 cup of almonds.
Divide batter evenly filling cups 3/4 full. Sprinkle with 1/4 cup almonds.
Bake 20-25 min. Cool 5 min. Remove from pan
