Makes about 4 dozen cookies
Combine flours, baking powder, baking soda, xanthan gum and cream of tarter in a mixing bowl and whisk to combine
In a large mixing bowl, beat butter and agave until fluffy. Add egg/flax mixture and extract and beat together. Add flour mixture and mix well, then stir in coconut. Shape dough into balls using a heaping teaspoon, flatten with a fork and bake 10-12 minutes until golden.
While cookies bake, cream ingredients for frosting together until smooth.
Remove from pan and cool on wire rack before frosting and eating them all at once.
I think the original recipe came with my mom's first Air-Bake cookie sheet, minus the coconut and definitely *not* gluten free. And I halved the recipe! I can't imagine how many cookies this would've made if I hadn't! ...wait.. yes I can. mmmmmm cookies. These are like real, honest to goodness "normal" sugar cookies. For those of you who don't 'do' gluten, you might not understand. For the rest of us, yes, I'm serious. Real sugar cookies. Only, I didn't use real sugar
