Preheat oven to 350 degrees.
Mix all the ingredients with a pastry blender until a cohesive dough forms.
Arrange 1" balls of dough on a cookie sheet covered with parchment paper, about 1 1/2 " apart.
Using a fork dipped in water, flatten each cookie to about 1/4" thick, making a crosshatch design.
Bake the cookies for 8-10 minutes, or until they turn light golden brown on top.
Slide the parchment paper off the cookie sheet onto a rack to cool.
