Preheat oven to 375. In a large bowl, put the yogurt (plantains), olive oil, apple cider vinegar and herbs de Provence Mix well with a spoon. Add almond flour (or arrowroot starch), rice flour (tigernut flour), baking soda, salt and olives. Mix with a spoon until all ingredients are well combined. Grease a 7" tin with olive oil and transfer the batter to the tin. Cook for 20-25 minutes or until it reaches a golden color. Serve warm or room temperature.
