Sift flour, xanthan gum, sugar, baking powder and salt together into a bowl. Add milk, egg, 3 Tbsp of oil and vanilla and stir until moistened.
Heat a large frying pan over medium high heat, add a couple drops of oil and wipe around pan with a piece of paper towel.
Drop 1/4 cup of batter into frying pan. Cook for about 2-3 minutes over low heat until bubbly and bubbles break, the base is golden brown, then flip them over and cook another 2 minutes
Serve warm drizzled with maple syrup or fresh berries.
