Gluten-Free pecan cookies
1. Preheat the oven to 375 degrees F. Grease a cookie sheet
2. Cream the butter and sugar in a medium-size bowl. Add the egg. Mix until light and thick. Add all the other ingredients. Beat until thick and creamy. Drop by rounded teaspoonfuls onto the prepared pan. Bake for approximately 9 minutes, until lightly browned on the top and edges, and golden on the bottom. Allow to cool for just a minute or so, for easier removal from cookie sheet. Transfer from the cookie sheet to a rack and let cool completely.
