Beat together the egg yolk and milk.
In a food processor, pulse together the GF flour, sugar and salt until incorporated. Add the butter and pulse until it is pea-sized and evenly incorporated. Gradually, stream in the cold milk and yolk mixture until the flour just comes together.
Turn the mixture out onto your work surface and form a 2"-thick round disk. Wrap in plastic and refrigerate for at least 30 minutes or up to overnight. Roll out and use in your favorite pie or tart recipe.
