Sweet chewy dessert made of rice flour and peanut filling in a warming syrup.
Dough:
Mix glutinous rice flour, 1 cup of water and oil together. Stir until dough releases from the side of the bowl.
Cover the dough with plastic wrap to keep it from drying out.
Filling:
Mix peanut butter and sugar until blended.
Assembly:
1. Take out half the dough and keep the rest covered.
2. Roll out dough into an 1" long strand.
3. Cut pieces into 1" sections.
4. Flatten a piece a dough using your palm, into a 2 1/2" circle.
5. Put 1/4 teaspoon or less into the middle of dough. Fold over and roll into a ball. Make sure no filling is oozing out.
6. Put the dumpling on a lightly floured surface.
7. Continue making the dumplings from the rest of the dough.
Syrup:
Bring water to boil. Add in ginger slices (optional) and brown sugar. For a traditional touch, use the stick form of brown sugar.
Once the sugar has melted, keep the syrup in a lower simmer and gently lower a dumpling into it. Repeat until the surface of the pot is filled. Do not crowd the dumplings.
The rice balls are done when they float to the top, about 5 minutes.
