My great-grandmother's recipe.
Saute bacon in dutch oven. Remove bacon, crumble and set aside, leave about 4 tablespoons of bacon grease. Saute onion and green peppers in bacon grease. When soft, add rice and brown a little. When rice is coated and a little brown, add tomatoes, jalepenoes and water. Bring to boil. Cover and simmer for 20 minutes. Stir in cheese and crumbled bacon.
