Suggest a better description1. Place potatoes in saucepan, cover with cold water, bring to boil over high heat and cook for 25 minutes until tender. Drain well.
2. When still hot, peel skin by hand or use potato ricer to puree potatoes. Season with salt.
3. Add flour to potatoes, knead briefly, add extra flour if required.
4. Turn dough onto floured surface, cut into smaller pieces, roll each out into a log about 2cm wide, cut each log into 2cm long pieces.
5. Roll each ball over the tines of a lightly-floured fork.
6. Bring large saucepan of water to boil, add 1/4 gnocchi at a time, remove with slotted spoon 10 seconds after gnocchi has risen to surface.
