Suggest a better descriptionIn a medium sauce pot, heat the oil and sauté onion and garlic until translucent, about 2-3 minutes. Add the stock and bring to a simmer.
Carefully and GRADUALLY add the polenta while whisking vigorously and continually. Once completely incorporated, be careful as this porridge is very hot and tends to bubble and splat.
Allow the polenta to cook for approximately 8 minutes or until it is tender. Similar idea to grits.
Remove from heat once done and whisk in the goat cheese and Parmesan cheese. Adjust seasoning with salt and pepper as desired.
