Vegan cheese sauce with a mild cheddar flavor. From "The Non-Dairy Formulary".
Blend all ingredients together in blender until smooth. (Golden color develops during cooking.)
Cook over medium-low heat in nonstick pan, stirring and scraping with rubber scraper.
Continue to stir and scrape vigorously, mixing in curds that form.
When mixture bubbles and begins to look glossy and smooth, sample and add any needed salt. If a lighter consistency is desired, add more soy milk.
Reduce heat to low, stirring occasionally until ready to serve.
Sauces thickens as it cools.
