Cut bacon in small strips and sauté in a pan on medium heat. Don't let it get crispy, just cook until it doesn't look raw anymore. Slice the Brussels sprouts thickly and add to the pan. Cook until fragrant. Finely chop shallot and garlic and add to pan. As soon as you smell the garlic, add the white wine to prevent burning. Add chicken broth and let it cool almost completely. (???) Add the cream and when little bubbles form, add the Gorgonzola cheese and whisk until smooth. Keep the sauce on medium to low heat until it reduces to a thicker consistency. Season with salt and pepper to taste.
You can grill or bake chicken and pour this sauce over or you can toss with pasta. You can also cut chicken breast or thighs into serving portions and toss with this sauce. Just don't forget important step of drizzling the honey over the dish at the very end, it adds the perfect balance.
Note from Jamie: Mel, I made this after you reminded me of how delicious the gnocchi was at Sarto's, lol. Derek likes this sauce better so hopefully you will, too. Next time I make it, I'm going to throw in some chopped, toasted hazelnuts! I think they would add a super fun crunch and flavor profile.
