Suggest a better descriptionOn a bowl, sprinkle the bitter melon with the salt. Rub and press with your hands to soften. When the bitter melon is tender, transfer it to a colander and rinse off the salt under the running water. Squeeze off excess water.
Place a makisu bamboo rolling mat on the counter. Place 1 nori sheet on the mat. Evenly spread 1/2 cup rice on the sheet, leaving a 1 1/2 inch wide space on the edge away from you. Over the rice, lay out a quarter of the bitter melon, 3 carrots, and a quarter of the avocado in lines from left to right.
Roll the mat and the ingredients, holding the ingredients in place; do not roll in the mat. Repeat steps with remaining sheets and fillings.
Cut each roll into 8 portions and arrange on serving plates. Serve with one teaspoon soy sauce per serving and Wasabi on the side.
