Cook the quinoa according to the directions on box.
Build each jar by layering 1/2 cup cooked quinoa, diced chicken, 1 cup spinach, pinch of fresh basil, a handful of sliced tomatoes and a few pieces of mozzarella.
Before eating, stir in a spoonful of fresh pesto. Shake or toss together and serve.
